As ready as I am for the summer heat to be gone, I’m really going to miss all of the fresh summer produce. There are so just many wonderful meals that can be made with zucchini, corn, peppers, tomatoes, and fragrant basil.

I completely agree! While I’m looking forward to cooler weather, I’ll definitely miss the abundance of fresh summer produce. It’s amazing how versatile ingredients like zucchini, corn, peppers, tomatoes, and basil can be – they’re perfect for so many delicious recipes.
The fact that they’re mostly one-pot, stovetop, or grill-friendly makes them even more appealing. It’s great to see that they can be easily modified to fit any diet, too.
