Swift Sweet Potato Curry from Blissful Basil
Swift Sweet Potato Curry- a satisfying and creamy curry that takes just 30 minutes and one pot to make! (vegan, gluten-free + oil-free)
Happy Wednesday, friends! I hope 2017 is off to a good start for you so far.
I’m excited for today’s post not only because it’s a super tasty and easy recipe, but because it comes from one of my favorite new cookbooks which you have a chance to win a copy of! Do I have your attention yet?
The cookbook I’m referring to is from the author of the beautiful vegan food blog, Blissful Basil. I discovered Ashley’s blog not long after I started my own and instantly became a fan. Her recipes are wholesome, her photography is stunning, and her kind personality shines through her writing.
In her book Ashley shares her history struggling with anxiety, her journey transitioning from a vegetarian diet to plant-based, and ultimately discovering the ability to cultivate happiness by choosing habits that nurture building a solid foundation from within.
There is so much wisdom in her words and it reminded that eating nourishing foods isn’t just about detoxing from a long weekend of partying or trying to look our best in a bikini. It’s about adopting a lifestyle that allows us to thrive in every way, for overall happiness and well-being.
Blissful Basil features over a 100 plant-based recipes that will not only inspire but excite you to eat a plant-based diet. They are bursting with colors, flavors and textures that will delight all of the senses.
It was tough deciding which one I should share with you but this Swift Sweet Potato Curry seemed like the perfect quick and warming dish for a lazy winter day. The ingredient list is super simple and it takes just 30 minutes + one pot to prepare. I know you guys appreciate having little to cleanup as much as I do so I figured you’d like that part.
I also found the method of toasting the spices then adding water (rather than using oil) to be brilliant. It goes to show that you don’t always have to cook with oil to create a delicious stovetop meal!
Here are a few of her recipes that I’m dying to try next:
- Electric Turmeric-Lemonade Smoothie
- Crispy Parmesan Brussels Sprout Chips with Lemon Aoili
- Creamy Cauliflower and Turmeric Soup with Smoky Shiitake Bacon
- Sloppy Shiitakes with Tangy Rainbow Slaw
- Velvety Mac n’ Yellow Split Pea Cheese
- Baked Mostacciolo with Walnut Bolognese + Cashew Mozzarella
- Chocolate Chip Coconut Oil Cookie Bars
- Cardamom + Pecan-Pear Upside-Down Pudding Cake
To get this year off to a great start, Blissful Basil’s publisher has been kind enough to offer YOU a chance to win a copy of her gorgeous book! All you have to do is tell me in the comments how you #honoryourbliss.
It can be anything, big or small. Just tell me what choices you make that bring you happiness; emotionally, physically and spiritually. I’ll pick a winner one week from today. Good luck!

Blissful Basil sounds like an amazing resource! I really must get my paws on that cookbook! This recipe is straight up my alley and the mere thought of the other recipes you mentioned are making my mouth water. Upside down pudding cake? Ugh, I MUST! And now I’m craving curry like noooobody’s business!
This looks awesome! I love the idea of thinking of your diet as putting good things in, rather than using healthy foods as a form of restriction. I think that’s definitely something I’m going to focus on more mindfully this year!
This looks amazing! Curries in the winter are so necessary <3 the choices that bring me happiness are to SLEEP and to only speak if it improves upon the silence. A favorite quote that has improved my life so much.
This looks delicious! I’m with Karlie, sleep makes me happy too! I also love baking and trying out new recipes and techniques. Hugging and kissing my little guys always makes me happy.
I can’t wait to make this sweet potato curry. I also love Ashley’s blog! I am going to honor my bliss this year by cooking more and taking on more challenging recipes in the kitchen.
Walking improves my sense of calmness. I find that I allow myself to not think about stressful things during that time. This recipe looks delicious, and will be making it today!
This looks SO delicious! I need to pick up a copy of her book!
Yum! This looks nutritious and delicious! I love combining the flavors of ginger, cilantro, and coconut–so rich and tasty! I honor my bliss by taking time for myself; for my health by cooking and clean eating, for my mind by reading and enjoying music, and for my entire being by surrounding myself with friends and laughter. #honoryourbliss to be the best you that you can be!
As I was reading your post, my 10# dog crawled up on my lap to curl up and rest. So it is easy to honor my bliss as she makes my life so blissful just by her simple but so powerful action of sharing warmth and love. :)
This recipe looks great. One of my goals this year is to eat less refined carbs so I will serve the curry over riced cauliflower.
I #honormybliss by waking up early so that I have time to leisurely drink my coffee and scroll through a few blogs before my hectic day starts.
Deli! Can you explain to me what ‘spritzing’ is please? I’m English.
It just means to squeeze the lime juice on top. :)
Thank you Sarah! Much obliged!
the curry looks wonderful. It is interesting you posted this today because earlier I just found her blog and was immediately drawn to her writing and recipes. I try to honor my bliss by getting out and walking the dogs everyday and they in turn keep me honest and true to that goal.
Great choice from the cookbook, Sarah! :) And you photographed it so beautifully, too <3
Looks like a good curry. I honor my bliss by taking a nap when I can, preferably with the cat in my lap. Even tho I’m not vegetarian, I enjoy reading cookbooks and learning more about preparing good food every chance I get. Thank you for hosting this giveaway.
Wow, this likes another great cookbook! Cookbooks are my weakness, love to read them and tag so many recipes. I honor my bliss by walking, either with my friend and all our dogs on hikes Getting out to enjoy the fresh air and wonderful views we have brings me calm.
As a mom to a 4 year old, almost 2 year old and a newborn I honor my bliss by drinking a green smoothie every day. I often have to eat rapidly or not at all and having a smoothie every day guarantees me some fruits and vegetables. It’s also quick, easy, and my kids like them too. :)
Looks amazing! Things that make me happy to are surrounding myself with people I love, cooking, and reading devotionals!
I just bought a ridiculous amount of sweet potatoes at the store and need to put them to use with this curry! Plus, I think I have just about everything else on hand – win! Cheers to 2017 friend!! PS – I love that grey bowl! I can never find ones that aren’t super shiny… booooo!
Thanks Ashley! It’s from Heath Ceramics in San Francisco. They aren’t cheap but they’re high quality and they ship nationwide! :)
I #honormybliss by reconnecting with nature. I ALWAYS feel at my highest level of bliss when I’m meandering outdoors; whether it be the simple task of weeding my garden, walking barefoot across my lawn, or wildcrafting my way through the Boreal Forest with my family finding edible delights from Nature…it’s just simply… the.best.feeling.EVER!
Green Blessings to You & Yours,
May your New Year be filled with Bliss!
This dish looks awesome! Getting a good night’s rest and eating a good breakfast makes me feel EXCELLENT each day. Oh and snuggling with my pup and hubs. Happy New Year, Sarah! :)
Can’t wait to try out the recipe soon! Thanks for sharing, and encouraging (us) me to #honormybliss. This year, I plan to do so by cultivating better sleep habits, and nourishing with lots of fresh, raw foods, and yummy new vegan ones like this curry!
Sarah, thanks for bringing this curry and book to my attention! I #honormybliss by making great dishes like this, stopping to watch the sunrise (or sunset or moonrise) and riding the tandem with my husband as often as I can.
I can’t wait to make this recipe! We love curry in our home and sweet potatoes too. I will #honormybliss by continuing to try new vegetarian/vegan recipes in 2017. I love experimenting and cooking healthy meals for my husband.
Thank you for this beautiful review, Sarah. Warms my heart. xo
This is definitely going on my menu for next week! I #honormybliss by spending 1 hour a day doing something just for me.
I honor my bliss by eating a clean plant-based diet that makes me feel mentally and physically better and that helps me manage my health. I am very grateful to you, Ashley at Blissful Basil, and other dietary lifestyle bloggers who make cooking fresh, delicious recipes everyday a joy instead of a chore.

This was so delicious! I love that it doesn’t require any oil and is so easy to make :)
I find bliss in cooking healthy meals for myself. Using my hands for something other than a keyboard or touchscreen while nourishing myself and creating something that didn’t exist before. Oh, and cooking while listening/dancing to music, for sure. #honoryourbliss
I would love to win this cookbook! I honor my bliss but treating myself when I go out to eat with my husband by eating whatever I am craving. I eat healthy, wholesome foods throughout the week so I indulge without guilt. Also, considering my history with an eating disorder, I have discovered that depriving myself does not work!
This looks delicious, I have a new love for curry dishes. I’m not vegetarian, but definitely enjoy vegetarian dishes. I honor my bliss by eating as clean as I can and working out everyday so I can be the healthiest me I can be.
I need to get my hands on this book because this recipe looks amazing! I love all recipes that have sweet potato but I especially like this curry because it looks so warm and comforting! I’ve loved Ashley’s blog since I discovered it a few years ago so I’m sure her new cookbook is awesome :)
This curry dish looks great! I honoured my bliss in a big way. I left my high stress job on the 5th to care for my well being. To care for my kids and to be there for my aging Mom and Father-in-law. Being able to create nourishing food and to share.
This is such a quick easy recipe! Where I am, it is a snow day…but my house smells amazing. Bliss for me is loving my beagle and doing yoga. I have been working towards a plant based diet for a year….I am now full vegan. Happy 2017 to all!
Congrats, Mang! I’ve been working towards becoming entirely plant-based as well and it is not easy. You should be so proud of yourself!
Now I know what the family may eat this weekend! Thanks you for sharing, it looks so delicious!
I honor my bliss when I paint. It brings me joy and I really feel align with my soul when I do this.
Hello I’m a born again vegan, and being born again means I surrender to a new life of what God provides naturally grown foods. I enjoy being a vegan now because of variety, choices, subtitions and just feeling better after every meal. Knowing I made it without all the extra added ingredient you fine in process foods is the way I honor my bliss. It takes time, dedication and real patience to be a vegan and many people in life still have not squired those skills. So please keep posting recipes as I enjoy experimenting and changing them to fit my desires.
I tasted this before I added any lime and I was not excited about it, I have to say. But once the lime was added, pow! Delicious. The cilantro is pretty important too, I feel. Easy, quick, healthy, tasty.
