Is it just me or does this time of year make you crave carrot cake?
I’ve been dreaming of it as I fall asleep at night which is usually an indicator that I need to post a recipe for it soon. But with warm weather right around the corner, I’m not really in the mood to test cake at the moment. Besides, wouldn’t you rather have something with similar flavors that’s light and energizing, like these carrot cake bites? :)
Ever since I made this Turmeric Carrot Cake Smoothie, I’ve been obsessed with the combination. Besides the awesome health benefits, the best part about these energy bites is how simple they are to make. I’m talking no food processor, just one bowl and a scooper. That’s all there is to it.
The base is made from a combo of almond flour, rolled oats, cashew butter, and of course, shredded carrot. For mix-ins, I like to add shredded coconut and raisins but feel free to mix things up with whatever dried fruit or nuts you like!
Turmeric Carrot Cake Energy Bites
Yield: 18 bites
Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients:
- 1 cup almond flour
- 1/2 cup rolled oats
- 1/2 cup cashew butter
- 1/2 cup shredded carrot
- 1/2 cup shredded unsweetened coconut
- 1/4 cup raisins
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 scoop MegaFood Daily Turmeric Nutrient Booster Powder
- 3 to 4 tablespoons maple syrup
Directions:
In a large bowl, combine all ingredients and stir until everything is incorporated and a dough forms. Taste test the dough and add more maple syrup, if preferred.
Using a scooper, scoop out about 1 heaping tablespoon at a time and roll into balls. Store in a sealed container in the refrigerator for up to 4 days.

These look awesome! I love carrot cake, mostly for the cream cheese frosting, though haha. I need to make something like this for next week. I’ve been drained from work, so I need all the energy I can get!
I am finding myself craving carrot cake but am staying away from the actual cake! I love carrot cake inspired flavors and these bites are absolutely perfect! I love the sound of that turmeric powder…I will have to look that up!

These energy bites sounds awesome! I’m not a huge carrot cake person, but I’m definitely a sucker for a killer carrot cake frosting. I’ve been using almond flour & cashew butter in a lot of recipes lately!
Recipe calls for “oats”, what kind – quick cooking??

Hi Katy! I’m sorry, I don’t have the calories for this recipe. The nutrition calculator I was using wasn’t giving me accurate results so I’m in the process of trying to find a new one. Hopefully I can add them soon!

These were so yummy and so easy to make. I am excited to snack on them! I recently found this blog and it has been a huge help to me as someone who has food allergies. I subbed the cashew butter with almond butter and it was great!

Thèse are AWESOME!!! A couple of things, though…do NOT use cashew butter unless you can find one without sunflower oil. Sunflower oil is rich in Omega 6! Ole rag 6’s are HORRIBLE for your heart. I used almond butter instead – it has palm fruit oil in it, not palm oil which is also VERY unhealthy. I also added two tbsp of skim milk which made it much easier to mix. I also used only a 1/2 c of almond flour and added 1/2 c buckwheat flower. Oh! And 3 tbsp of flax seeds. We LOVE it! Thank you for this recipe!!

Does this freeze well? and how long does it last in the freezer when stored correctly?
