No-Bake Blueberry Muffin Energy Bites- just 1 bowl + 10 minutes for a healthy and energizing snack that’s refined sugar-free!
How are you guys holding up so far with resolutions and all that jazz?
One of my goals this year was to wake up early to workout at least 3 days per week. I was doing so good until this past Monday when I overslept because we stayed up late watching Homeland and The Affair.
I was already pretty disappointed in myself and then, to make matters worse, the gym I’ve been going to (Orangetheory Fitness) charged me a no show fee for the class that I missed. WTF?
Somehow the girl that signed me up failed to mention that they charge no show fees. Had I known that, I definitely would have gotten my lazy butt out of bed. I’m not about to pay someone $10 because I missed a workout.
Of course when I called they were willing to refund me the fee but they said the next time it happens it’s a done deal. Okay mom, jeez. They said that they process up to 50,000 late fees per month nationwide. Craziness!
Anyway, let’s talk about energy bites. Cause we need energy to workout.
These No-Bake Blueberry Muffin Energy Bites are based off of an Almond Joy version I posted on here several years ago. They’re one of my favorite quick and easy snacks to whip up. I especially love using crispy brown rice cereal because it gives them a nice light and crispy texture.
This time around I used Erewhon’s Harvest Medley cereal blend which features a combination of sorghum, brown rice and puffed quinoa. Not only is it certified gluten-free but it packs in 3 grams of protein and 2 grams of fiber in each serving without any excess added sugars. However, if for some reason you can’t find the Harvest Medley, the Crispy Brown Rice Cereal will also work just fine.
There’s also rolled oats, hemp seeds, ground flax and almond butter in the mix for even more plant protein and fiber. Then pure maple syrup, vanilla extract and dried blueberries offer just enough sweetness and flavor to make you feel like you’re eating a blueberry muffin. They’re so good!
All you need is 1 bowl + 10 minutes to whip them up and they make a perfect mid-morning or afternoon snack to help keep your energy going strong. I hope you love them!
No-Bake Blueberry Muffin Energy Bites
Yield: 18 bites
Prep Time: 10
Total Time: 10

Ingredients:
- 1/2 cup creamy almond butter (or cashew butter)
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup rolled oats*
- 1/2 cup Erewhon Harvest Medley Cereal (or Crispy Brown Rice Cereal)
- 1/4 cup ground flax seed
- pinch of salt
- 2 tablespoons hemp seeds (or chia seeds)
- 1/3 cup dried blueberries
Directions:
In a large bowl, combine the almond butter and maple syrup then stir together. Add the remaining ingredients to the bowl and stir until evenly coated. If the mixture seems to wet, sprinkle in a few more oats. If it seems to dry, add a teaspoon of water at a time until moist it’s enough. Refrigerate for 10 minutes.
Using a scooper, scoop out roughly 1 and 1/2 tablespoons of the mixture at a time and roll into balls. Store in an airtight container in the refrigerator for up to one week.
*Be sure to use certified gluten-free oats for allergies

How do you like OTF? I loved it when I was going in the fall, but it just got too expensive considering I also had a regular gym and hot yoga/barre memberships. That $10 charge is crazy to me!
I like doing classes because I’m more likely to stick with it and OTF is the best thing around here. But it is much more expensive than I would like. I definitely couldn’t afford it in addition to something else!
I once accidentally missed a massage appointment and they wanted to charge me the full cost, so I just never went back! I totally understand their reasoning, but sorry!
I have everything on hand except dried blueberries, so once I grab those, these will be making their way into my mouth. I need healthier snacks since my energy bites of late have been ju jubes.
Yeah, that’s a crappy rule, especially if it’s the first time it happened.

I’ve fallen off the wagon a couple of times on my healthy eating (and workouts) but I’m just getting right back on without beating myself up over it — it happens! And charging you a no-show fee? Ouch. Speaking of Homeland, it’s off to a slow start isn’t it?
These energy bites are the way I love to snack, and dried blueberries with almond butter are such a delicious combination! I need to be on the lookout for that cereal!
Yeah, I definitely think that’s the right attitude to have. It’s okay to miss a few here and there as long as you get back to it eventually.
I agree that Homeland is off to a slow start. They’re really dragging out the Quinn story. Hopefully it starts to pick up soon!
I often have a bowl of energy bites in my kitchen to snack on during the week! These bites look awesome, I love dried blueberries and every other ingredient in them. And good for you for having a resolution to get in your workouts…Sometimes life happens and we miss the gym here and there, but if you remain consistent in working at it, you’ll be successful in your resolution lady! :)

Yummy looking energy bites! The scooper is a great idea to get even size balls. Thank you for the picture of the Erewhon cereal which looks like a good combo of gluten free grains. These look perfect! I love the one bowl and 10 minute concept. I will try making enough to store in the fridge for one week but I’m guessing I’ll devour them much sooner. They look so good. I need a new healthy snack recipe so this fits the bill! Thanks for sharing.

No show fees? I’ve never heard of it before.. and it sounds like they make a lot of money off it! Holy cow! That would be motivation for me to make to class for sure! I’m doing good with sticking to my goals, but then this week, I got sick… no energy what so ever and a way stuffy head. I’m totally pouting…. : / You know I love these little bites.. and I use Erewhon when I need a good, tasty puffed rice! You know these bites are right up my alley! wait, what? did the gym try to levy a charge on a class that you had already paid for (or had you signed up reserved a spot and not yet paid) – if it’s the former, I think my head would have blown off my shoulders. How do they justify this money grab to their patrons? Unbelievable institutional greed. In happier thoughts tho, we love energy bites! You pay a monthly fee for the gym and if you miss a class that you signed up for (they have an 8-hour cancellation policy) then they charge you a fee. It’s definitely designed to make them money but at the same time, it holds you accountable so I have mixed feelings about it.

Quick, easy and Delicious! I used puffed rice, powdered coconut (instead of flax seed), and dried cranberries. It made exactly 18 muffins. My husband will love them!
