French Onion Soup + Olives N Wine Turns 1!
You guys, I am so excited for today’s post. A bunch of bloggers have teamed up to throw a virtual surprise party for Becky at Olives n Wine to celebrate her one year blogiversary!!
Seeing how Becky is Miss Popular {she’s really just that loveable}, there are nearly thirty bloggers participating and each of us have made one of her delicious recipes to share with you.
I saw this recipe on Becky’s blog waaaaaay back in the day and have wanted to make it ever since. Then when the idea came up to throw a virtual party for her, I couldn’t decide between this and her Greek Spaghetti Squash but obviously, the soup won.
Caramelized onions with savory broth, melted parmesan and French bread? Comfort in a bowl, my friends.
No, I did not put that whole glob of cheese in my mouth. Only half of it, thank you very much.
Her recipe turned out to be ridiculously easy and perfect for the cool {cough, sixty degree weather, cough} we’ve been having here in California.
Ingredients
3 onions, thinly sliced
1/2 butter (I used Earth Balance)
3 cups vegetable broth
1 bay leaf
1 tablespoon dried thyme
2 tablespoons white wine vinegar
4 slices of French bread
1 cup parmesan cheese, shredded
Instructions
- Start by warning 1/4 cup of butter in a large skillet over medium heat. After the butter has melted, add the onions and cook until light golden brown and soft, about 40 minutes.
- Then add the broth, white wine vinegar, bay leaf, and remaining butter and stir to combine. Bring to a boil then reduce to a simmer and allow to cook for at least 15 minutes.
- Set the broiler to high and divide the broth into four small bowls. Place a piece of French bread in each bowl and cover each with 1/4 cup parmesan then cook under the broiler for 3-5 minutes, until the cheese is bubble and slightly browned.
- Serve and enjoy!

Wow that soup looks amazing! YUM! I feel like most French Onion Soups are made with beef, so I can never enjoy them :( But this vegetarian recipe looks delish!
First of all, that soup looks AMAZING. Second of all I’m impressed you put together that list. I was too busy eating cookies. Time to start planning the next virtual potluck for YOU. Yes, I’m kind of obsessed with you!
You know, I’ve never tried french onion soup! It always smells so delicious in restaurants, but beef broth keeps me away. I definitely have to try making this at home!

If I would’ve known this was vegetarian I SO would’ve made it!! French Onion is usually beef based so I didn’t even think twice. It looks delicious. And your photography just keeps getting better and better!

I’m just going to say quietly that I have never had French Onion Soup, but this looks SO good!! And only 8 ingredients?! My my. The only thing I would have to buy is a solid piece of bread, but other than that I am good to go!

Yet another one that I am going to have to try! I love that this contains so few ingredients AND is vegetarian! It can be so difficult to find French onion soup recipes that don’t focus on using beef broth.

Sixty degree weather, eh? Sounds pretty rough…… ;) This soup looks amazing!! French onion is a classic and I’ve recently been loving homemade soup so I should probably give this one a try.
I remember my old roommate (a French gal originally from Quebec City) used to make French Onion Soup. I thought it was one of the nastiest looking things ever but I was a little younger and not so wise.
I love making soups..and this one looks like a winner! I had no idea that it was this simple!
