If you’ve made these Puffed Amaranth, Pistachio and Dark Chocolate Bars then you know what I’m talking about. The combo of pistachios with coconut, dark chocolate, lemon zest and cranberries is something unforgettable. Tangy, sweet, salty and all kinds of delicious.
Now you might be asking why I made a recipe with such similar flavors in bite form instead of bars. Well as much as I love those granola bars, puffing the amaranth can be a bit tedious. Sometimes you need a snack and you need it fast. That’s where these bites come in!
They are made with rolled oats, almond butter and pistachios for fiber, protein, and healthy fats that will keep your energy up. For sweetness I used a small amount of pure maple syrup and juice sweetened cranberries. Using dark chocolate such as Alter Eco’s Super Blackout also helps keep the sugar content low. Just keep in mind that super dark chocolate can be a little bitter for some people’s taste so you may want to use semi-sweet if that’s the case.
I like to use my food processor to make the bites but if you don’t have one, that’s okay too. You can use oat flour in place of the rolled oats and chop the pistachios by hand. Easy peasy.

Dark Chocolate Pistachio Bliss Bites
Yield: 14 bites
Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients:
- 1 cup rolled oats (or oat flour)
- 1/2 cup pistachios
- 1/2 cup almond butter
- 1/4 cup pure maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon fine sea salt
- 1 ounce finely chopped dark chocolate
- 1/4 cup dried cranberries
- 1/4 cup unsweetened coconut
- lemon zest
Directions:
In a food processor, blend oats to a coarse flour. Add the pistachios and pulse until finely chopped.
Add the almond butter, maple syrup, vanilla extract and sea salt then pulse into a dough forms. You should be able to press the dough between your fingers and have it hold together. Transfer the dough to a large bowl.
Alternatively you can make these without a food processor by using oat flour and finely chopping the pistachios by hand. Place them in a large bowl with almond butter, maple syrup, vanilla extract, and sea salt then stir until a dough forms.
To the bowl, add the chopped chocolate, cranberries, coconut and lemon zest. Stir until evenly combined. Using a scooper, scoop out tablespoon sized portions and roll into balls. Seal in a jar and refrigerate for up to 1 week.

Sarah, I made these today and they are really good! I used about 3/4 tsp of lemon zest as I didn’t see a measurement. Next time I will pulse in the chocolate, dried cranberries, coconut and lemon zest; they did not mix easily into the rest of the dough. Thanks for another good bites recipe!
These were very quick to whip together and I love the simple ingredient list! I did a mini meal prep to have these bites on hand for snacking throughout the week. I’m keeping my in the freezer for longevity.
These are so good! I had to omit the cranberries and lemon zest. The pistachios really make a difference.
