If you’re still on the hunt for a vegan holiday main that is easy to make and won’t break the bank then allow me to introduce you this vegan ‘turkey’ roast!

  2. It takes just 15-minutes to prep.
  3. You can store it uncooked OR cook and reheat when ready to serve.
  4. It’s high in protein and satiating.
  5. It pairs perfectly with your favorite gravy.
  6. It’s cheaper than buying a store-bought vegan roast.

Vegan ‘Turkey’ Roast Ingredients

  • Super Firm Tofu– Using tofu keeps the recipe low in cost and using super firm tofu makes it higher in protein. If you need to make it soy-free you can substitute with Big Mountain’s soy-free fava bean tofu. Just keep in mind that tofu comes in smaller packages so you will have to buy 2 packages to get to 14-ounces.
  • Vegetable Broth- I like to make my own broth using Better Than Bouillon.
  • Chickpea Flour- I have only tested this recipe with chickpea flour because I like that it adds protein and fiber while still keeping the recipe gluten-free. It might also work with oat flour or a GF all-purpose, but I would suggest giving it a test run first.
  • Potato Starch– This ingredients helps to bind the roast and give it structure. Really any kind of starch will work. Arrowroot or cornstarch would make good alternatives.
  • Nutritional Yeast– Adds a *very* subtle cheesy flavor.
  • Poultry Seasoning– Make sure to use a poultry seasoning that you like because they can vary quite a bit. If you don’t have poultry seasoning, you can also use 1 teaspoon dried oregano and 1 teaspoon dried thyme. You may also want to increase the salt in the recipe to a full teaspoon.
  • Tamari– For salty, umami flavor. Regular soy sauce works if you don’t need it to be gluten-free.
  • Extra Virgin Olive Oil– Adds moisture and a bit of of healthy fat. Feel free to use any neutral flavored oil that you prefer.
  • Dijon Mustard- For a slight tang. Make sure it is dijon and NOT yellow mustard.
  • Garlic- Garlic powder works in a pinch (1 teaspoon) but fresh garlic is definitely preferred.
  • Salt- I find 1/2 teaspoon is plenty when using poultry seasoning but you may want to add more if using dried oregano & thyme.

How to Make Vegan ‘Turkey’ Roast

What is so great about this recipe is how easy it is to make!

  1. Combine everything in a food processor and blend until smooth.
  2. Transfer to a parchment lined baking sheet then shape into a loaf.
  3. Cut a few slices in the top.
  4. Bake 30-35 minutes.
  5. Allow to cool for 15-20 minutes.
  6. Slice, serve and enjoy!

Ingredients

  • 14 ounces super firm tofu
  • ¼ cup vegetable broth
  • ½ cup chickpea flour, or arrowroot starch/ cornstarch
  • 3 tablespoons potato starch
  • 2 tablespoons tamari, or soy sauce if not GF
  • 1 tablespoon nutritional yeast
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons dried poultry seasoning , or 1 teaspoon dried oregano + 1 teaspoon dried thyme
  • 2 teaspoons dijon mustard
  • 3 garlic cloves
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 350°F then line a baking sheet with parchment paper.
  • In a large food processor, combine the tofu with ¼ cup vegetable broth, ½ cup chickpea flour, 3 tablespoons potato starch, 1 tablespoon nutritional yeast, 1 tablespoon extra virgin olive oil, 2 tablespoons tamari, 2 teaspoons dried poultry seasoning, 2 teaspoons dijon mustard, 3 garlic cloves, and ½ teaspoon salt. Blend until smooth and evenly combined. You may need to scrape the sides in between blending to help everything incorporate evenly.
  • Transfer the mixture to the parchment lined baking sheet. Using your hands, form the mixture into about a 5x12-inch roast.
  • Bake in the oven for 30 minutes, until firm and light brown. Allow to cool for 15-20 minutes before slicing. Slice, serve with desired gravy/sauce and enjoy!
