Lemon Ginger Spritzers with Fresh Mint
Lemon Ginger Spritzers with Fresh Mint- made with ginger simple syrup and fresh lemon juice, these sparkling drinks are super refreshing and healthy too!
I have a bit of an obsession with fizzy drinks. Kombucha, shrubs, Aperol Spritz…I love them all, especially when it’s hot outside. There’s something about the effervescence that I find so refreshing.
If you’ve been following me for a while then you know that I also love a good homemade spritzer. Some favorites of mine include Pineapple Cucumber and Pomegranate, but I had some of leftover ginger syrup from these Blueberry Ginger Margaritas and wanted to try something new with a lemon ginger and mint combination. Turns out it was definitely a good idea.
To make the ginger syrup, all you need is fresh minced ginger and a little bit of honey or agave nectar. Then you place it in a saucepan, bring it to a simmer and cook for about 30 minutes until it thickens.
Once you’ve got the syrup made, it’s as simple as combining it with lemon juice, fresh mint and your favorite sparkling water.
It’s so basic I feel silly calling it a recipe but it really is the perfect way to cool off on a warm day. I’m especially looking forward to making them for us to enjoy on our new patio once we move in.
I gotta tell ya, maintaining a calm and patient mindset during a renovation is so much harder than it seems. We’ve had a few hiccups thanks to some communication issues and I had my first official breakdown on Saturday. The stress of it all has been so overwhelming and I was overdue for a good cry.
I’m sorry I’m off topic but I appreciate you guys letting me vent for a second. I just have to keep telling myself it will all be worth it in the end. ;)
Lemon Ginger Spritzers with Fresh Mint
Yield: 2 spritzers

Cook Time: 35 minutes
Total Time: 40 minutes

For the Spritzers
- 1 pint sparkling water
- 4 tablespoons ginger syrup (see recipe below)

- 2 tablespoons agave nectar (or honey)
- 1/2 cup water
Directions:
Make the ginger syrup: In a small saucepan, combine the fresh ginger, agave, and water. Bring to a boil then reduce to a simmer and cook for 35 minutes. Careful not to cook at too high of a temperature or the ginger will burn. Set aside to cool.
Make the spritzers: Fill two 16-ounce glasses with ice. Add 2 tablespoons of ginger syrup in each and juice of 1/2 lemon in each. Distribute fresh mint evenly and fill each glass with sparkling water. Serve immediately and enjoy!

Simple basic recipes are the very best kind because they’re the ones that we’ll make over and over again! I love that this is minimal prep yet the flavors sound like they really wow! I’d love to drink this all summer. :)
Renovations…moving…buying, selling… it’s all chaotic! I actually have all of the above happening in my life, but I’m sure I’ll talk about it on the blog & social soon ;-) But hang in there girl. IT WILL BE WORTH IT!
On another note, this spritzer sounds so light & refreshing. I want to add some vodka or light rum in there to spike it!
Oh now I’m so curious what’s going on with you! I thought I could handle it but it’s been hands down the most stressful thing I’ve ever done in my life. I hope yours goes smooth!
This looks so good!! Good luck on your renovations! I promise it’ll all get done and one day you’ll be happily settled in there. :)
Thanks Kelli! I think if we had done this process with a single close construction loan that I wouldn’t be so stressed out. It’s just the fear of losing our interest rate that we locked if we don’t finish in time, it not appraising for the second closing, etc. that’s causing me so much stress. Not to mention worrying about not having somewhere to live if it isn’t finished on time. UGH. Why did I do this to myself? lol
Something our mortgage guy had told us is that banks want it to work out and the appraisers know that so they usually appraise it at what it needs to be appraised at even if it’s a little under. Maybe that’ll help you feel better! But, that does actually sound really stressful! I hope the construction finishes on time!! Good Luck!
That’s reassuring! Ours will definitely need to appraise on the high end which is why I am so stressed. I just need to keep faith that it will all work out. Thank you for the encouragement! <3
