Immune-Boosting Lemon Ginger and Turmeric Cubes- made with just 3-ingredients, these cubes are perfect to prep and have on hand for a healthy morning boost of antioxidants! 

We’re officially in the thick of winter which means most of us are lacking vitamin D and spending too much time indoors. These immunity-boosting shots are my favorite way to add a little sunshine to my day when I can’t have the real thing.

Blended with fresh ginger, turmeric and lemon juice, they are like a shot of bright and zingy goodness. They will definitely have you making some funny faces when you drink them, ha! But I promise your body will thank you.

The best part is that you don’t even need a juicer to make them. Just a blender and a fine mesh strainer, and you’re good to go. 

Feel-Good Ingredients

  • Fresh Ginger- great for digestion, fresh ginger contains compounds that can help your body fight off bacteria and viruses. Using fresh, peeled ginger is key here. I don’t recommend substituting anything from a tube or a jar, and especially not ground ginger.
  • Fresh Turmeric- the most active compound in turmeric, curcumin, is a potent antioxidant that has many health benefits including fighting free radicals. Just like the ginger, you want to be sure you are using fresh peeled turmeric, not ground turmeric powder. It can be tough to find but most local health food stores tend to carry it.
  • Lemon Juice- bursting with Vitamin C and citric acid, lemon juice can aid in immune health and may also prevent kidney stones. The bright citrus flavor pairs perfectly with spicy ginger and earthy turmeric.

Easy to Make

It’s as easy as blending all three ingredients together in a blender then straining and pouring into an ice cube tray. I used my Vitamix since I know it can handle breaking down tough bits of fresh ginger and turmeric but a NutriBullet should also be tough enough to do the job.

Once the cubes are frozen, you simply add them to a cup with water and let them melt to form a delicious, zingy and healthy drink!

Servings: 12 cubes

Ingredients

  • 1 cup lemon juice, about 4 lemons
  • 10 g fresh ginger, peeled (about 4-inches)
  • 10 g fresh turmeric, peeled (about 4-inches)

Instructions

  • In a high speed blender (or NutriBullet), combine the peeled ginger, turmeric and lemon juice. Blend on high until most of the ginger and turmeric have been broken down.
  • Using a fine mesh strainer, pour over a large measuring cup so that any unblended bits are left behind. Pour liquid from the measuring cup into the ice cube tray and freeze for 6-8 hours.
  • Remove 2-3 cubes from tray and place in a cup with 6-8 ounces of luke warm water. Once melted, stir to combine, and enjoy!
