I know it might be a little early in the season for strawberries but I couldn’t resist. Fresh and juicy California-grown organic strawberries which just so happened to be on sale…I was practically forced to buy them.

This actually worked out well for me since I’ve been craving strawberries n’ cream oatmeal since last year, when I made a peaches n’ cream version. I guess I’m slowly making my way down the list of Quaker instant oatmeal packet flavors.

Plus I had to have a steel cut oatmeal recipe on here since that’s my oat of choice. I’ve been warming up with a bowl almost every weekend since it’s been cold out. Not only are they {slightly} healthier than regular oats but the texture is way better, in my humble opinion.

I can’t tell you how many times I’ve started cooking a pot and then got side-tracked making something else. You would think cooking them for twice as long would turn them to mush but nope! They still have that delicious slightly chewy texture that I love.

Given, they do take longer to cook but if you’re short on time or impatient (ahem) which I am most definitely not, then you can take three minutes the night before to prep them so that they’re pretty much ready to go in the morning.

All you have to do is reheat them with a little extra milk, add the strawberries and serve. With a little extra cream on top, of course…

When I say cream I mean full-fat coconut milk but you can use light if you must. I also used unsweetened vanilla almond milk because I prefer the hint of vanilla flavor that it gives but you can use all coconut milk if you don’t have both on hand.

I would tell you that this was so good that I plan to eat it every morning when strawberries are back in season, but then I wouldn’t be telling the truth. I’m that person who rolls out of bed with ten minutes to get ready before I have to be out the door and I can barely even taste whatever gets shoved in my mouth as I’m packing my lunch for the day.

This is a breakfast that deserves to be savored! So sure, I’ll make it again but it will have to be on a day when I can actually sit down to enjoy the flavor of juicy strawberries paired with warm creamy oats. It’s definitely a good way to start any weekend!

Strawberries n’ Cream Steel Cut Oatmeal

Prep Time: 5 minutes

Cook Time: 35 minutes

Total Time: 40 minutes

Yield: 1 big bowl or 2 medium size bowls

Strawberries n’ Cream Steel Cut Oatmeal

Ingredients

1/2 cup steel cut oats

1 cup water

1/2 cup coconut milk + extra for topping (light or full fat)

1 cup unsweetened vanilla almond milk (can also use all coconut milk, I prefer the vanilla almond milk flavor)

2-3 teaspoons maple syrup

3/4 cup strawberries

Instructions

  1. Start by bring the water and 1/2 cup coconut milk to a boil. Add the oatmeal and reduce heat to low.
  2. Allow to simmer while continuing to stir intermittently for about 15 minutes, until most of the liquid has absorbed.
  3. Next add 1/2 cup of the almond milk and maple syrup then continue to simmer for another 10 minutes while stirring.
  4. Then add the last 1/2 cup of almond milk and simmer for 10 more minutes while stirring then remove the pot from the heat.
  5. Finally, add the strawberries to the pot and stir together. Serve oatmeal in one large bowl or two separate bowls, top with coconut milk, and enjoy!.

Notes

Overnight method: Bring 1 cup water + 1/2 cup coconut milk + 1/2 cup almond milk to a boil. Add the oats, cover with a lid and allow to cook for one minute. Then turn off the heat and allow to sit overnight. In the morning, add the rest of the almond milk and turn the heat on low to medium. Stir the oats and allow to cook until most of the liquid has absorbed, about five minutes. Add the strawberries, top with coconut milk and serve.

Note: I like my oatmeal creamy, not dry. If you prefer your oatmeal drier, leave out 1/2 cup of the liquid
