We’re doing a little Throwback Thursday today to one of my all-time favorite summer salads! It’s been almost 3 years since I first posted the recipe on here.
Shockingly enough, I’m not all that embarrassed by the pictures. It was more the format that was bothering me. I used to write the post in the directions of the recipes…don’t ask me where I got that idea from. Sheesh.
Anyway, I really love this salad so I thought I would give it a little refresher and share it with you guys before the upcoming holiday weekend. It’s made with the best produce that summer has to offer: fresh herbs, crisp green beans, zucchini, sweet corn, and juicy red tomatoes.
It’s perfect for picnics and barbecues because it’s completely dairy-free so you don’t have to worry about it sitting out for a little while. And thanks to the chickpeas it packs a hearty punch of protein for your vegetarian and vegan friends, in-case someone forgot to bring veggie burgers for them. Trust me, I’ve been there many of times and wished I had something as satisfying and delicious as this salad. It’s something everyone will love!
