Strawberries n’ Cream Steel Cut Oatmeal
I know it might be a little early in the season for strawberries but I couldn’t resist. Fresh and juicy California-grown organic strawberries which just so happened to be on sale…I was practically forced to buy them.
This actually worked out well for me since I’ve been craving strawberries n’ cream oatmeal since last year, when I made a peaches n’ cream version. I guess I’m slowly making my way down the list of Quaker instant oatmeal packet flavors.
Plus I had to have a steel cut oatmeal recipe on here since that’s my oat of choice. I’ve been warming up with a bowl almost every weekend since it’s been cold out. Not only are they {slightly} healthier than regular oats but the texture is way better, in my humble opinion.
I can’t tell you how many times I’ve started cooking a pot and then got side-tracked making something else. You would think cooking them for twice as long would turn them to mush but nope! They still have that delicious slightly chewy texture that I love.
Given, they do take longer to cook but if you’re short on time or impatient (ahem) which I am most definitely not, then you can take three minutes the night before to prep them so that they’re pretty much ready to go in the morning.
All you have to do is reheat them with a little extra milk, add the strawberries and serve. With a little extra cream on top, of course…
When I say cream I mean full-fat coconut milk but you can use light if you must. I also used unsweetened vanilla almond milk because I prefer the hint of vanilla flavor that it gives but you can use all coconut milk if you don’t have both on hand.
I would tell you that this was so good that I plan to eat it every morning when strawberries are back in season, but then I wouldn’t be telling the truth. I’m that person who rolls out of bed with ten minutes to get ready before I have to be out the door and I can barely even taste whatever gets shoved in my mouth as I’m packing my lunch for the day.
This is a breakfast that deserves to be savored! So sure, I’ll make it again but it will have to be on a day when I can actually sit down to enjoy the flavor of juicy strawberries paired with warm creamy oats. It’s definitely a good way to start any weekend!
Ingredients
1/2 cup steel cut oats
1 cup water
1/2 cup coconut milk + extra for topping (light or full fat)
1 cup unsweetened vanilla almond milk (can also use all coconut milk, I prefer the vanilla almond milk flavor)
2-3 teaspoons maple syrup
3/4 cup strawberries
Instructions
- Start by bring the water and 1/2 cup coconut milk to a boil. Add the oatmeal and reduce heat to low.
- Allow to simmer while continuing to stir intermittently for about 15 minutes, until most of the liquid has absorbed.
- Next add 1/2 cup of the almond milk and maple syrup then continue to simmer for another 10 minutes while stirring.
- Then add the last 1/2 cup of almond milk and simmer for 10 more minutes while stirring then remove the pot from the heat.
- Finally, add the strawberries to the pot and stir together. Serve oatmeal in one large bowl or two separate bowls, top with coconut milk, and enjoy!.
Notes
Overnight method: Bring 1 cup water + 1/2 cup coconut milk + 1/2 cup almond milk to a boil. Add the oats, cover with a lid and allow to cook for one minute. Then turn off the heat and allow to sit overnight. In the morning, add the rest of the almond milk and turn the heat on low to medium. Stir the oats and allow to cook until most of the liquid has absorbed, about five minutes. Add the strawberries, top with coconut milk and serve.
Note: I like my oatmeal creamy, not dry. If you prefer your oatmeal drier, leave out 1/2 cup of the liquid
delicious! i looove steel cut oatmeal… did you know there’s such thing as quicking cooking steel cut oats!? yes, they’re the best!
This is my favorite breakfast :) Your photography is getting better and better!
This looks delicious!!! :)
I think this is the prettiest bowl of oats I’ve ever seen.
Love this, I can see myself eating this for breakfast every day. Beautiful pics!
Oh my, does this look fabulous! I’m such a huge strawberry fan and just as soon as they are in season in our area, I’m making this!
This looks so delish! Can you believe I have never used coconut milk before in a recipe? I just never think to pick it up at the grocery!
Ok I don’t really love oatmeal….don’t hate me….but I LOVE the simplicity of this recipe. I also just bought strawberries because they were on sale :) C’mon spring..bring on the strawberries!
Strawberries have been sporadically going on sale around these parts, which is making me all sorts of excited about the upcoming berry season! And I’m a huge, huge fan of steel cut oats, but my stomach definitely isn’t :( It just has a way easier time digesting the quicker cooking ones.
Total perfection! I’ve been having steel-cut oats every morning lately. The chewy texture is what gets me….I’m obsessed! Can’t wait to try this lovely straw version. Helloooo spring!

This looks awesome Sarah! I love Strawberries. Unfortunately it will take some time till German Strawberries will hit the stores and they just taste the best. Hope you´re doing well?
Hey Anne! I’m doing great. Just trying to get ready for the big day in less than two weeks! :)
How are things with you?
I´m soo excited for you! I didn´t realise that it´s already in two weeks. Hope you share some pictures :).
I´m fine. I´m doing an internship right now which I really enjoy :)
I’m happy to hear you are well! Yes, I will definitely share pictures! :)
What kind of internship are you doing?
Great :). It´s at a children´s home (not exactly, as there are only ten children and it´s more family like). I´m not quite sure what I´d like to do after graduating but definitely something in the social field. How did you figure out your career?
Mmmmm strawberries and cream oatmeal, what a great idea? I don’t eat oatmeal often, but I always enjoy it when I do. I can’t wait until strawberries are in season here!
Yum!! I eat something very similar when I make steel-cut oats (also my oat of choice!). I love mine creamy as well – so so good. I bought strawberries this week too – on sale and pretty good looking for this time of the year!
Ah yes, I adore strawberries and really all berries in general!
This honestly looks so amazing! I wish I had the ingredients so I could make it for breakfast tomorrow! Strawberries just taste so good and I love oatmeal!
Ohhh la la! This looks right up my alley. I love steel cut oats. I usually have them for breakfast. Can’t wait to try this out :)
Strawberries have totally been on sale (and delicious!) lately. I am all for eating ALL the strawberries once they finally taste good. But is it bad that I don’t think I’ve EVER had steel cut oats? I agree, that would be a weekend thing… time for me to stop making excuses and totally try them!
Sarah I am drooling over this recipe. I love steel cut oats and don’t cook with them nearly enough (same problem as you, too rushed in the morning.) However, this weekend calls for sitting down and savoring breakfast. I love the use of coconut milk and can’t wait to give this a whirl!
SO beautiful. Strawberries and cram Quaker oatmeal was my favorite growing up, I need to try this homemade (and healthier!) version!
This looks like the most perfect bowl of oats ever! I love those fresh and juicy strawberries : )
Oh this sounds so good! I love oatmeal and coconut but have never thought about cooking my oats with coconut milk. I’ll have to try this next time I have some extra breakfast time.
I just had this for breakfast today, so good! I didn’t have strawberries so I added some almond butter but I love how cream it is with the coconut/almond milk combination.
Holy cow you make steel cut oats look so so good! I don’t know if I have ever had steel cut oats – I’ve only had regular oatmeal I think?
And I’m with you on the quick breakfast after rolling out of bed situation. That’s all I can handle! <3
coconut/almond milk is a great idea for oatmeal!
Oatmeal is one of my new comfort foods, I swear. These steel cut oats look so delicious! I love the addition of coconut cream (best stuff ever).
Pinning!

Such a yummy recipe! I love a warm, creamy bowl of oatmeal in the morning, and this recipe was exactly that! I used unsweetened vanilla coconut almond milk instead of just the unsweetened vanilla for an extra coconuty-dose. I also put on a dollop of coconut cream, and sprinkled on some coconut flakes, cacao nibs and cinnamon at the end. SO creamy and delicious!! Thank you so much for this recipe, it’s definitely one of my favourites now :)
Thank you for letting me know you like it, Jenna! Your additions sound delicious! :)
