Easy, Cheesy Dinner + Sautéed Kale
First of all, I just want to thank everyone for their sweet comments on my perfectly round burgers. I have to admit, I was a little disappointed that no one commented on the shape of my buns though. ;)
Speaking of perfect buns, I have been feeling a little under the weather this week and haven’t made it to the gym at all. My buns are starting to feel like perfectly round pancakes!
Instead of the gym, we have been taking the girls on extra long walks after work which has allowed us all to enjoy a little fresh air together.
It was in the 80’s today and the flowering trees are starting to show green leaves now.
So pretty. Our walks have been especially good for Coco because our new Veterinarian recommended that she lose 15 pounds!
Oy vey, that’s not going to be easy.
Tonight’s dinner featured a repeat offender:
Along with an easy, cheesy side:
And also some fresh, sautéed kale. I started by sautéing shallot and garlic in olive oil over medium heat for about 2 minutes.
Then I added the kale,
poured in the vegetable broth,
and covered to let steam for about 5 minutes.
After most of the broth evaporated, I gave it a few more stirs and it was ready to serve! I also threw in some sliced shiitake mushrooms I had left over in the refrigerator.
Sorry, weeknight lighting doesn’t make for a pretty picture!
Overall, it was a quick and tasty meal, although I couldn’t finish all of the mac n cheese. I really enjoyed the kale prepared like that but Brandon thought the shallots overpowered the flavor of the kale. I think that’s the point, isn’t it?
Oh well, to each their own! (He may be eating it like that again in the near future though)
I might turn on American Idol for a bit but I am just not feeling it this year. One show I really love is Parenthood, but they seem to air it inconsistently. It could also be that I forget to record it and rely on On Demand to keep the most recent episodes available. Anyways, love that show and can’t wait for a new one!

Where did you get the No Bull Burger? I haven’t seen it at any of my local stores and have been curious about it since Kath has it quite often on her blog.

I had to buy the burgers from their website nobullburger.com and have them shipped to me. Shipping is pretty expensive but I bought 10 packages so they last me a while. You have to email them and complete the purchase via email or phone. They are really good though! I think Kath is their biggest advertiser!
We think Gigi has Collie in her but I’m not sure. I adopted her from a shelter and they said she was Golden Retriever mix but she looks nothing like a retriever. We usually shave her but decided to wait until it is consistently warm here, maybe a few more weeks.

I’ve finally found Kale here in Australia so I’m hoping to try and get some this weekend and try out ways of cooking it like you did. As well as Kale chips as they seem very interesting to make too.

I usually prepare sauteed spinach but I must start doing the same with kale. Blooming trees and green grass is what I ‘m desperately waiting for to show up in my area. I’m sure your dogs are happy to see that spring is coming. Finally more walks!
