You only need 5 ingredients to make these refreshing banana popsicles! Perfect for a fun and refreshing dessert that's nutritious too. (vegan, gluten-free, and nut-free option)
Line a baking sheet (or large platter) with parchment paper. Peel each banana and cut in half. Gently push a popsicle stick into the center of each banana and set aside on the baking sheet.
In a medium size (glass or ceramic) bowl, combine the chocolate and peanut butter. Place the bowl in a large skillet with a few inches of water and bring to a simmer. Continue to simmer until the chocolate begins to melt. Stir together until smooth. Remove from heat and set aside. Alternatively, you can microwave the chocolate and peanut butter in increments of 20 seconds, until melted, stirring in between.
Using a large spoon, spoon the melted chocolate over each banana until completely coated. Arrange each banana on the lined baking sheet then cover with sprinkles. Freeze for 2-3 hours, until chocolate is frozen solid. Serve and enjoy!
Leftovers can be stored in an airtight container in the freezer for up to 3 months.
