Dark Chocolate Pistachio Bliss Bites

Ingredients

  • 1 cup rolled oats or oat flour
  • 1/2 cup pistachios
  • 1/2 cup almond butter
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1 ounce finely chopped dark chocolate
  • 1/4 cup dried cranberries
  • 1/4 cup unsweetened coconut
  • lemon zest

Instructions

  • In a food processor, blend oats to a coarse flour. Add the pistachios and pulse until finely chopped. 
  • Add the almond butter, maple syrup, vanilla extract and sea salt then pulse into a dough forms. You should be able to press the dough between your fingers and have it hold together. Transfer the dough to a large bowl.
  • Alternatively you can make these without a food processor by using oat flour and finely chopping the pistachios by hand. Place them in a large bowl with almond butter, maple syrup, vanilla extract, and sea salt then stir until a dough forms.
  • To the bowl, add the chopped chocolate, cranberries, coconut and lemon zest. Stir until evenly combined. Using a scooper, scoop out tablespoon sized portions and roll into balls. Seal in a jar and refrigerate for up to 1 week.
