Strawberry Protein Pudding

- 14 ounces extra firm tofu
- 8 ounces strawberries hulled
- 3 tablespoons lemon juice about 1 small lemon
- 2 tablespoons honey or pure maple syrup
- 1 teaspoon vanilla extract preferably non-alcoholic
- 1 tablespoon unsweetened soy milk plus more, as needed
- coconut whipped cream for serving
In a high speed blender, layer strawberries with lemon juice, honey or maple syrup, vanilla and tofu. Using a tamper stick, blend until a smooth and creamy consistency forms. Add 1 tablespoon of milk at a time to help blend. Be careful not to add too much milk as it can make the texture runny. Taste test to see if you prefer more sweetener or a pinch of salt, and adjust accordingly.
Transfer to a sealed container and refrigerate for 6-8 hours, until set. Serve with coconut whipped cream, and enjoy!
