Strawberry Protein Pudding

Made with just 6-ingredients, this strawberry pudding is natural sweetened and packed with protein. (dairy-free, nut-free, gluten-free)

Ingredients

  • 14 ounces extra firm tofu
  • 8 ounces strawberries hulled
  • 3 tablespoons lemon juice about 1 small lemon
  • 2 tablespoons honey or pure maple syrup
  • 1 teaspoon vanilla extract preferably non-alcoholic
  • 1 tablespoon unsweetened soy milk plus more, as needed
  • coconut whipped cream for serving

Instructions

  • In a high speed blender, layer strawberries with lemon juice, honey or maple syrup, vanilla and tofu. Using a tamper stick, blend until a smooth and creamy consistency forms. Add 1 tablespoon of milk at a time to help blend. Be careful not to add too much milk as it can make the texture runny. Taste test to see if you prefer more sweetener or a pinch of salt, and adjust accordingly.
  • Transfer to a sealed container and refrigerate for 6-8 hours, until set. Serve with coconut whipped cream, and enjoy!

Notes

To increase the protein content, you can add vanilla or unflavored protein powder. Start with 1 tablespoon and taste test to see if you can tolerate adding more.
