Healthy Matcha Ice Cream (Vegan, Ninja Creami)

Made with just 6-ingredients, no one will ever guess this delicious ice cream is dairy-free and good for you!

Ingredients

  • cup dairy-free milk I like soy milk for protein
  • 1 cup frozen riced cauliflower
  • ½ cup cashews or walnuts
  • 2-3 medjool dates pit removed
  • 1 teaspoon matcha powder
  • ½ scoop protein powder I use a combo of unflavored and vanilla
  • pinch of salt optional

Instructions

  • In a high speed blender, combine all of the ingredients and blend until smooth. Taste test and add more dates (can also use honey or pure maple syrup) if you prefer a sweeter taste. Add a pinch of salt, if desired. Blend again.
  • Pour contents of blender into Ninja Creami containers. It should fill 2 of them. Freeze for at least 8 hours, or overnight.
  • Blend in the Ninja Creami on the Lite Ice Cream setting. The first run will likely look a bit powdery. Add a splash of milk and blend again. At this point it should be smooth and have a scoopable texture. If not, use the respin button to blend once more. Serve immediately and enjoy!
