German Chocolate Protein Brownie Bites
Packed with all of the delicious flavor of German Chocolate Cake, these brownie bites are made with wholesome ingredients and have 4 grams of protein each! (vegan, gluten-free)

- ½ cup pecans raw or roasted
- 1 cup Medjool dates pitted
- 1 scoop chocolate protein powder see notes for substitutions
- 2 tablespoons cacao powder or unsweetened cocoa powder
- 2 tablespoons hemp seeds
- ¼ cup unsweetened shredded coconut
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1-3 tablespoons water as needed
- ¼ cup mini chocolate chips plus a few tablespoons more for melting and drizzling on top, if desired
In a food processor, add ½ cup pecans and pulse until finely chopped. Add the cup of dates and continue to blend until finely chopped.
Next, add the scoop of protein powder and 2 tablespoons cacao powder. Pulse to combine. Add 2 tablespoons hemp seeds, ¼ cup unsweetened shredded coconut, 1 teaspoon vanilla extract and ¼ teaspoon salt. Blend until evenly combined.
To the mixture, add 1 tablespoon of water. Pulse to combine. Test to see if the dough is moist enough. It should be able to stick together between your fingers. If it seems to dry, add another 1-2 tablespoons of water, pulse a few times, then test again.
Roll about 1-2 tablespoons of the dough into a ball at a time. You should get about 12 bites for the recipe. Store in a sealed container and refrigerate for up to 1 week.

You can substitute the protein powder with 2 tablespoons additional cacao powder (or cocoa powder). You may want to add a tablespoon of sweetener (such as pure maple syrup) to compensate for the sweetness that the protein powder adds.
