Easy Tofu Scramble

Servings: 4 servings

Ingredients

  • 14 ounces soft tofu drained and patted dry*
  • 1 and 1/2 teaspoons oil
  • 1 small red bell pepper stemmed, seeded, and finely chopped
  • 1 shallot minced
  • 3/4 teaspoon salt
  • 1/8 teaspoon turmeric
  • 1/8 teaspoon pepper
  • 2 tablespoons finely chopped fresh basil

Instructions

  • Cover a baking sheet with paper towels (or a tea towel) then crumble the tofu into 1/4- to 1/2-inch pieces on top. Let drain for 20 minutes, then gently press with paper towels.
  • In a large skillet, warm the oil over medium heat. Add the bell pepper and shallot and cook until softened, about 5 minutes. Stir in crumbled tofu with salt, turmeric, and pepper. Cook until tofu is hot, about 3-5 minutes. Remove from heat, add fresh basil then serve warm.

Notes

*If you can't find soft tofu, firm tofu (not super firm) will also work just be careful not to crumble it too finely.
