Dark Chocolate, Almond & Coconut Hemp Seed Granola

Ingredients

  • 1/3 cup honey I used raw, unfiltered
  • 1/3 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1/2 cup hemp seeds
  • 1 cup coconut pieces
  • 2 tablespoons cocoa powder
  • 1 cup raw almond pieces whole almonds can be ground to be pieces in a food processor
  • 1/2 cup dark chocolate chips

Instructions

  • Preheat oven to 350°F then line a cookie sheet with parchment paper.
  • In a large bowl, whisk together the honey, coconut oil, and vanilla. Add the remaining ingredients (except for the chocolate chips) and mix until well combined.
  • Spread granola mixture out onto the cookie sheet, using the back of a spoon to flatten it. Bake in the oven for 22 minutes or until light golden brown.
  • Remove from oven and allow to cool for about 20 minutes. Once granola has cooled, break it into big chunks and place into an airtight container. Add the chocolate chips to the granola in the container and mix well. Store in an airtight container for up to 1 week.
