In a large (wide) bowl or baking dish, combine all of the ingredients for the marinade. Whisk until smooth.
To the bowl, add the smoked tofu slices. Gently toss until coated with the marinade. Set aside for at least 30 minutes, or up to overnight, stirring intermittently to assure all of the pieces are evenly coated in the marinade.
Preheat the oven to 400°F. Line a baking sheet with parchment paper or a silicone mat and set aside. Arrange the tofu pieces on top leaving at least an inch between each slice.
Bake in the oven for 25-30 minutes, flipping halfway through. Cooking time may vary depending on your oven so keep an eye to make sure it doesn't burn.
Allow to cool before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 5 days.
