Easy Vegan Strawberry Pie
Made with just 6 ingredients, this strawberry pie is the perfect light and refreshing treat for summertime! (vegan with gluten-free option)

- 1 prepared pie crust such as Wholly Wholesome
- 1 pint strawberries hulled and sliced in half
- 1 ¾ cup water
- 2 tablespoons corn starch
- 1 packet vegan strawberry gelatin
- 2 tablespoons organic cane sugar optional

Begin by baking the pie crust according to the directions on the package. Set aside to cool.
Once the crust has cooled, arrange the sliced strawberries on top.
In a large sauce pan, combine cold water and cornstarch and whisk until dissolved. Bring liquid to a boil over medium-high heat and then stir-in cane sugar and contents of vegan gelatin. Remove from heat and continue to stir until ingredients dissolve and start to slightly thicken.
Pour mixture overtop of strawberries within the pie crust and set aside for about 45 minutes to an hour, until firm. Vegan gelatin doesn’t require refrigeration to solidify but we prefer it cold. Once the pie is firm, top with whipped cream, serve and enjoy!
