Instructions

  • Preheat oven to 325°F and line a baking sheet with parchment paper or a silicone mat.
  • In a large bowl, stir together the peanut butter and maple syrup.
  • To the bowl, add the rolled oatmeal and protein powder. Stir until evenly coated.
  • Spread mixture over top of the baking sheet with ample space between clusters. Lightly spray granola with high heat oil.
  • Bake in oven for 15-20 mins, watching to make sure edges aren't burning. Remove from oven and set aside to cool.
  • Transfer cooled granola to a large bowl with lid for storing. Add chocolate chips or preferred mix-ins and stir to combine. Store sealed at room temperature for 3-5 days, or up to several weeks in the refrigerator.

Notes

*I used Truvani's chocolate protein powder which is sweetened with monk fruit. If you use a plain protein powder you may want to add more liquid sweetener or spices and flavoring such as ground cinnamon and vanilla extract.
**Any nut or seed butter will work
***Any liquid sweetener will work
