Peaches and Cream Yogurt Popsicles

- 2 cups dairy-free yogurt ideally plain or vanilla
- 1lb peaches pitted and diced (about 2-3 medium peaches)
- 3 tablespoons honey more or less, to taste
- 1 cup granola such as Bob's Red Mill Homestyle Granola
In a blender, combine 1½ cups of the diced peaches, 1 cup of the yogurt and 2 tablespoons honey. Blend until smooth then set aside.
In a small bowl, stir together the remaining yogurt and 1 tablespoon honey. You may want to use more or less honey depending on whether or not your yogurt is already sweetened. Set aside.
Layer the popsicle molds as follows: 2 tablespoons blended peach yogurt, 1 tablespoon yogurt/honey mixture, 1 tablespoon diced peaches, 1 tablespoon granola. Repeat layers until each mold is full. You should finish with a sprinkle of granola on top (which will end up being the bottom of the popsicle).
Place cover over the mold and insert the popsicle sticks. Freeze for 6 hours or up to overnight. Serve and enjoy!
