Honey-Lime Peach Salsa

Simple to make and bursting with summer flavor, this fruit salsa is the perfect side to serve at BBQ's and picnics!

Ingredients

  • 2 cups fresh peaches, diced into ½-inch pieces about 2-3 medium/large peaches
  • 1 cup tomato, diced into ½-inch pieces about 1 large tomato
  • 1 cup fresh corn kernels raw or grilled
  • ½ cup red onion finely chopped
  • ¼ cup jalapeño seeded and finely chopped
  • ¼ cup fresh basil thinly sliced
  • ¼ cup lime juice about 2 limes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey or more to taste
  • pinch of fine sea salt

Instructions

  • In a large bowl, combine the diced peaches, tomato, corn, onion, jalapeno and basil.
  • In a measuring cup, whisk together the lime juice, olive oil, honey and salt. Taste test to see if you prefer a sweeter flavor and add more honey, as desired.
  • Pour the honey-lime mixture over top of everything in the bowl. Stir to combine. Serve immediately or refrigerate for up to 2 hours before serving. Leftovers will usually hold up for 1-2 days depending on how ripe your peaches and tomato are, however the salsa is best when eaten the day of.
