Coconut-Lime & Mango Smoothie
She put de lime in de coconut, she drank dem bot up…
Oh yes, I went there.
So there have been a few chilly days over the past week that have actually started to feel like fall. I’m not complaining about the cool weather or anything but I just can’t believe that summer is almost over already. Before we know it, there will pumpkins and Halloween candy all over the place.
Okay, I’m not going to lie, I might be a tad excited for pumpkin recipes. Pumpkin bread, pumpkin pie, pumpkin muffins…but that doesn’t mean I’m ready to let go of summertime yet! I’m hanging on with all I’ve got: a luscious tropical smoothie.
As we were driving home from Lake Tahoe {sob}, we stopped to get a few smoothies for the road and I ordered a mango-lime flavor that was so refreshing, I instantly knew I had to recreate one at home. I modified it slightly by adding coconut meat and Greek yogurt for a thick, creamy texture with a little extra boost of tropical flavor and it turned out perfectly.
You guys, I kid you not, one sip of this will transport you right to a white, sandy beach.

Yep, that’s my backyard. It immediately transformed into a private island after I drank this smoothie. My rose bushes grew into tall palm trees with coconuts and I could hear the waves gently breaking on the shore as a cool breeze blew through my hair. It was glorious.
You don’t believe me, do you? Well, I guess you’ll have to make one and see for yourself.
Coconut-Lime & Mango Smoothie
Ingredients
- 10 ounces mango, diced and frozen
- 2 bananas, peeled and frozen
- 6 ounces vanilla Greek yogurt (can also use coconut flavored yogurt)
- 3 tablespoons lime juice (approximately juice from one lime)
- 3/4 cup coconut water
- 2 tablespoons coconut meat (only use one if using coconut yogurt)
- 1/3 cup unsweetened vanilla almond milk
Makes two 12 ounce smoothies
Directions
- Layer ingredients in a blender from top to bottom.
- Blend on high for about one minute or until a thick, creamy texture is achieved.
- Serve cold!
Easy peasy and completely delicious.
So, it’s Monday and there’s no more trash on television. Boo.
Oh wait, I forgot about Real Housewives. Hehe, I almost typed what Brandon calls that show but it isn’t exactly PG so I’ll have to save that one for later. I’ll give you a hint though: the ‘wive’ is replaced with a four letter word that starts with an S. Yeah, he kind of hates that show.

I love tropical flavors in smoothies. They are great at hiding the bitter flavor of kale too!

I love coconut in my smoothies!!! I usually use coconut milk but I must give coconut water a try.

Coconut milk would be amazing in this! It would be a great vegan substitute (with ice) to leave out the yogurt!
Holy smokes, this looks so good! I just recently got back from Hawaii and still have the tropical flavors in my mind ;). This is definitely going on my to-do cooking list!
That looks SOO good! Its been starting to feel a little like fall here too, and I have to admit I’m excited about it. Its not the end of the heat, im sure, but its been a nice little break. i cant wait for the pumpkin recipes!!
This looks so good! I adore mangos, I just can’t be bothered to chop them up half the time ;-) As much as I love summer, I think I’m getting close to being ready for fall too. Bring on boots, leather jackets, and pumpkin everything ;-) (oh, and there’s my birthday too….)
Oh no, I would never chop up mangoes for a smoothie! I usually buy frozen mango chunks from the freezer section. Hopefully Canada has them because it makes life so easy and tropically delicious! ;)

I’m with you on hanging on to the last few days of summer! I love love LOVE fall but I don’t love what comes after fall so much ;) This smoothie would be the perfect way to relax by the pool, especially with all of the lime and coconut!

yeah, that sounds heavenly. maybe add a little Bacardi in there somewhere. lol, I love that song by the way. Every time I hear it I think of Practical Magic where they are dancing around the kitchen making margaritas :) love that movie.

Mmmm…a perfect smoothie for summer! Maybe I’ll trying throwing in some vanilla protein powder and eating it for breakfast. Yum!!! Now I need to buy some more frozen mango asap!

I wouldn’t mind being transported to a white sandy beach! But at the same time, I’m definitely looking forward to fall. The colours, the flavours, the fashion. Love it all. Either way, this smoothie sounds delicious. I love the idea of adding Greek yogurt and coconut meat too… Must make it so creamy!

This is a really nice way to get a lift after a walk or exercise, my partner whipped up a couple after our sunday ride and we both enjoyed them plus this smoothie is healthy, what more can you ask :)
